Ingredients
Mashed Sweet Potato:
- Large Sweet Potato (cut into chunks)
- 2 cups Vegetable Broth
- 1-2 tsp. Turmeric
- 2 cloves Garlic (minced)
- Olive Oil
Dressing:
- 1/4 cup Lemon Juice
- 1/4 cup Parsley
- 1/3 cup Olive Oil
- 1 clove Garlic (whole)
- 2 tsp. Honey
- 1/4 tsp. Salt
Bowl:
- 2 Eggs (scrambled)
- 100g Brown Rice
- Whatever you want to add
Instruction
Mashed Sweet Potato:
- Heat the sweet potato with a swish of olive oil over a medium heat.
- Add turmeric and toss to coat.
- Add the garlic and broth.
- Simmer until the sweet potato is soft and almost all of the liquid is absorbed.
- Transfer to a small bowl and mash.
Dressing:
- Add everything into a food processor and pulse.
Bowl:
- Mix all ingredients into a bowl. Enjoy ?? you’ll be surprised at how good of a combo it is ??.
