- 1 Sweet Potato
- 1/2 cup Olive Oil
- Use a vegetable peeler to peel slices of sweet potato, the longer and fatter you can make them the easier they are to use (that’s what she said.)
- Once you have peeled the entire sweet potato heat the oil in a frying pan and lay the strips in the pan, try to keep them from touching too much.
- Gently pan fry them until they start to turn golden brown, then remove and put them on a drip tray in the oven on a low heat.
- Repeat until you have cooked them all.
